I love yummy chunky salads for dinner (especially when Apple Cake's for dessert!)  So when I was checking out this week's deals at Publix I figured we could surely find a way to put all that free Hidden Valley Dressing to use!Â
What made this meal so simple at our house was that we recently grilled our favorite marinated chicken recipe, and then just froze the cooked chicken. It's made quite a few meals so much less stressful at our house! Even if you don't have any cooked chicken it won't take you all that long to grill it up, but go ahead and grill extra so it's ready the next time you need it.Â

Here's what you'll need . . .
Salad Greens Publix Brand Bagged Salad on sale $2, use $1/1 Target Produce coupon if you were able to print it (no longer printing)
Grilled Chicken Perdue on sale $2.99 (not the greatest price, but if you don't have any in your freezer it'll do!) If you live near Earthfare your Publix may also accept the Buy One Get One Free Pound of Chicken Breast from Earthfare Coupon. For a great grilled chicken recipe, go HERE.
One green apple in chunks optional, we were all out but it would make a great addition!
1/2 – 1 cup sliced Grapes On Sale $1.69/lb., use that Target Produce coupon if if you have it!Â
Traditional Feta Cheese Athenos Feta Cheese BOGO $2.69, use B1G1 Athenos Feta Cheese Product
Salad Dressing Hidden Valley Ranch BOGO $3.45, use $2/1 Hidden Valley Farmhouse Originals Dressing  or $1/2 Hidden Valley Farmhouse Originals 8/22/2010 SS Insert (exp 10/22/2010)
Nuts Planters Nuts BOGO $3.09, use $1/2 Planters Nuts 9/26/2010 SS Insert (exp 11/7/2010); we used the Honey Roasted Planters & they were so good on top of the salad!
Golden Raisins or Craisins We just happened to have some golden raisins in our pantry so I added them . . . YUMMMM!
Grill chicken if not already cooked. Place salad greens on plate, top with apple, grapes, nuts, craisins or raisins, and feta. Drizzle with your favorite salad dressing.  Serve with some homemade bread (or grab some at Publix and use this $1/1 Target Bakery Item coupon if your store accepts Target as a competitor). Enjoy!

I knew they took Target coupons on brand name items like Hidden Valley or Ragu but I didn’t know that I can print a coupon on Target bread and use it towards Publix bread. WOW! This is a whole new world open to me! Do you know if Co.Ln. Publix takes the store brand item coupon?

Cheryl – yes – many Publix stores will accept them! It really helps make me only shop Publix and not worry about going elsewhere, so it’s a win/win for them too! (At least I hope they see it that way!)
