Streusel Topped Sweet Potato Casserole
While the turkey is usually the star of the Thanksgiving table, I can almost guarantee your guests will be asking for seconds (and thirds!) of this delicious sweet potato casserole. The streusel topping takes these mashed sweet potatoes up about a million notches and is the perfect sweet side for your feast.
This casserole is so easy to make, and can be prepped in the morning and baked right before you eat.
Thanksgiving meal tip: Your turkey needs to rest when you take it out of the oven so if you've got casseroles or other things that need to bake – pop them in then!

Ingredients for Streusel Topped Sweet Potato Casserole:
- Mashed sweet potatoes
- Sugar
- Butter
- Eggs
- Vanilla extract
- Evaporated milk
- Brown Sugar
- Baking Powder
- Flour
- Chopped pecans
How to make Sweet Potato Casserole:
Start by preheating your oven to 350° and greasing a 13×9-inch baking dish. For the sweet potatoes – you can buy these from the grocery store already mashed or you can cook them yourself. If you're cooking them, peel the potatoes and cut into 1/2″ rounds. Add to a large stock pot and fill with just enough to cover the potatoes. Boil for 13-15 minutes until you can easily pierce with a fork, taking care not to overcook as they will get grainy.
In a large mixing bowl, add your sweet potatoes, sugar, melted butter, eggs, vanilla, and evaporated milk and mix until well combined. Pour into the baking dish.
To make the streusel topping (my favorite part!), combine the brown sugar, baking powder, flour, and pecans and mix. Cut in your cold butter to the mixture. (To cut in the butter, start with 4-5 cubes and take two sharp knives. You are literally just cutting the butter this way and that so that it slowly mixes in with the ingredients but stays a bit crumbly). Sprinkle the topping evenly over the potatoes.
Bake for 45 minutes until the topping is golden brown.

This streusel topping is a family favorite here because it is just so delicious. The chopped pecans add a little crunch and perfectly compliment the sweet potatoes.
