Streusel-Topped Sweet Potato Casserole

Ingredients

Cassrole

  • 3 cups cooked sweet potatoes, mashed
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1.2 cup evaporated milk

Streusel Topping

  • 1/2 cup cold butter, cut into small pieces
  • 1 cup packed brown sugar
  • 1/2 tsp baking powder
  • 1/2 cup flour
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350℉. In a mixing bowl, combing sweet potatoes, sugar, butter, eggs, vanilla, and evaporated milk until well incorporated.
  • Pour into a greased 13x9-inch baking dish.
  • For the streusel topping: In a small bowl, cut the butter into the brown sugar, baking powder, flour, and pecans until crumbly. Sprinkle evenly over top of sweet potatoes.
  • Bake 45 minutes or until casserole is set and topping is golden brown.
