Roasted Cauliflower Parmesan
Roasted Cauliflower Parmesan is saucy, yet bubbly and cheesy and so full of Italian flavor. It even passes the picky kid test! If you've got cauliflower growing in your garden or just love this crunchy veggie, this is a new spin on it that you'll love.
You can serve this as a side dish alongside some Italian Beef or serve as a main dish vegetarian meal too. It really is such a versatile recipe and a great way to sneak in a few vegetables. 🙂
Ingredients needed for cauliflower parmesan:
- cauliflower
- olive oil
- kosher salt
- ground black pepper
- spaghetti sauce
- Parmesan cheese
- mozzarella cheese
- basil leaves

Directions for roasted cauliflower parmesan:
Trim the stem of the cauliflower and cut it vertically into about 1 inch planks (think like a steak)
Preheat oven to 425°F.
Place the cauliflower planks in a single layer on a rimmed baking sheet and brush both sides with some olive oil. Then sprinkle with a bit of salt and pepper.
Roast in a 425°F oven. Turn the cauliflower once during baking and bake until it is tender and golden, about 35 minutes.
Remove the pan from the oven, and spoon spaghetti sauce over each piece of cauliflower. Sprinkle with 1 cup of mozzarella cheese and a couple of tablespoons of Parmesan cheese.
Broil until the cheese is bubbly and golden in spots, about 3 minutes.
Finally, serve with another couple of tablespoons of Parmesan cheese and sprinkle with some fresh basil leaves.

- 1 large head cauliflower, stem trimmed and cut vertically into 1-inch planks
- 3 Tbsps olive oil
- kosher salt
- freshly ground black pepper
- 1 1/2 cups spaghetti sauce
- 1/4 cup freshly grated Parmesan cheese, divided
- 1 cup shredded mozzarella cheese
- 1/2 cup basil leaves, torn
Instructions
- Preheat oven to 425°F. Arrange cauliflower in a single layer on a rimmed baking sheet; brush both sides with olive oil. Sprinkle with a bit of salt and pepper.
- Roast, turning once until cauliflower is tender and golden, about 35 minutes.
- Remove from oven, and spoon spaghetti sauce over each piece of cauliflower. Sprinkle with mozzarella and half of the Parmesan cheese.
- Broil cauliflower until cheese is bubbly and golden in spots, about 3 minutes.
- Serve with remaining Parmesan cheese, and sprinkle with basil leaves.
