  • 2 tbsp butter
  • 1 lb sliced deli corned beef sliced into strips
  • 16 oz coleslaw mix
  • 12 oz swiss cheese block 1 cup, cubed
  • 3 green onions sliced

Pro Tip!  Laura used shredded cheese instead of the blocks – it was a huge time saver and didn’t change the flavor!

Also – don’t cook a corned beef! Just grab some sliced from the deli 🙂

  • 1 cup mayonnaise
  • 1/4 cup sugar-free ketchup
  • 4 tsps horseradish
  • 1 tsp hot sauce
  • 1 1/2 tsps worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper

How To Make Reuben Bowls

  1. In large skillet over medium heat, melt butter, add corned beef, cover, and cook 5 minutes.
  2. Add coleslaw, cover, and cook 5 minutes. Stir to combine.
  3. For dressing: In small bowl, mix dressing ingredients; set aside.
  4. Top coleslaw and beef mixture with cheese. Cover until cheese is melted.
  5. Divide reuben mixture into bowls, drizzle with dressing, and garnish with onions.
