Parmesan Zucchini
If you've got a garden growing right now, we are probably coming up soon on the time of summer when you will be OVERRUN with zucchini. This recipe is for you! This quick and easy parmesan zucchini is the perfect weeknight side dish.
It is roasted with a crusty parmesan flavor, and that makes this zucchini recipe delicious!

Ingredients for Perfect Parmesan Zucchini:
- 4 zucchini, quartered lengthwise
- ½ cup freshly grated Parmesan cheese
- ¾ tsp dried thyme
- ¾ tsp dried oregano
- ¾ tsp dried basil
- ½ tsp garlic powder
- salt and pepper
- 2 Tbsps olive oil or olive oil spray
If you don't have zucchini you can use yellow squash like our reader Nancy did. Yum!
Here's the full recipe for parmesan zucchini:
- Preheat the oven to 350°F. Coat a cooling rack with nonstick spray, and place onto a baking sheet; set aside.
- In a small bowl, combine Parmesan cheese, thyme, oregano, basil and garlic powder. Add desired amount of salt and pepper to taste.
- Place zucchini onto the prepared baking sheet. Drizzle with olive oil, and sprinkle with Parmesan cheese mixture.
- Bake until tender, about 15-20 minutes. Broil 3-5 minutes, or until crisp and golden brown.
