Perfect Parmesan Zucchini

Ingredients

  • 4 zucchini, quartered lengthwise
  • 1/2 cup grated Parmesan cheese - fresh
  • 3/4 tsp dried thyme
  • 3/4 tsp dried oregano
  • 3/4 tsp dried basil
  • 1/2 tsp garlic powder
  • salt and pepper
  • 2 tbsps olive oil or olive oil spray

Instructions

  • Preheat the oven to 350°F. Coat a cooling rack with nonstick spray, and place onto a baking sheet; set aside.
  • In a small bowl, combine Parmesan cheese, thyme, oregano, basil and garlic powder. Add desired amount of salt and pepper to taste.
  • Place zucchini onto the prepared baking sheet. Drizzle with olive oil, and sprinkle with Parmesan cheese mixture.
  • Bake until tender, about 15-20 minutes. Broil 3-5 minutes, or until crisp and golden brown.
