Preheat the oven to 350°F. Coat a cooling rack with nonstick spray, and place onto a baking sheet; set aside.
In a small bowl, combine Parmesan cheese, thyme, oregano, basil and garlic powder. Add desired amount of salt and pepper to taste.
Place zucchini onto the prepared baking sheet. Drizzle with olive oil, and sprinkle with Parmesan cheese mixture.
Bake until tender, about 15-20 minutes. Broil 3-5 minutes, or until crisp and golden brown.
