Why on earth haven't I made Mexican Pizza before? Last week when I cleaned out my pantry and realized I had the mixings of taco night all ready to go, my husband mentioned that Mexican Pizza might be a recipe worth trying out.
I knew it couldn't be hard to make, and now that we've had it we'll definitely add it in as a regular dinner meal in our weeknight rotation. Â It's a great way to pinch those pennies by eating at home, and you can easily adapt it if you have any picky eaters in your home. (Not that I'd know what that's like . . . ahem.)Â
{Better Than Taco Bell} Homemade Mexican Pizza
Ingredients
- 1/2 lb. ground beef
- 1 medium diced onion
- 1/2 tsp minced garlic
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 16 oz can refried beans
- 4 10 inch four tortillas
- 1/2 cups shredded cheese we used 4 Kraft 4 Cheese Mexican Style
- 2 green onions
- 1 to mato diced
- 1/4 cup sour cream optional
Instructions
- Preheat oven to 350 and spray two pie plates with cooking spray.
- Add beef, onion and garlic in skillet and cook over medium heat until beef is browned and onion is transparent. Drain grease.
- Add chili powder, cumin, paprika, and salt to meat to season.
- Lay one tortilla in each plate, and cover with one layer of refried beans. Add half the seasoned ground beef to each tortilla, then cover with second tortilla.
- Bake in oven for 10 minutes at 350.
- Remove pie plates from oven, and spread half the salsa over the top of each tortilla. Cover the pizzas with half the cheddar cheese, half the tomatoes, and half the green onions.
- Bake an additional 5-10 minutes in oven, until cheese is melted. Remove from oven and let cool, and serve with additional salsa and sour cream. Yum!
If you want to make the recipe even easier, just pick up one of the Old El Paso kits and use the seasoning packets inside the box instead of adding extra spices. Either way, it should take just a few minutes to throw everything together and you'll have an easy dinner at home!
