Ingredients
- Cooked chicken
- Shredded cheddar cheese
- Black beans
- Green chiles
- Black olives
- Sweet onion
- Sour cream
- Mayonnaise
- Taco seasoning
- Fritos for serving
How to make Mexican Chicken Salad
I can't stress enough just how easy this recipe is to toss together!
Add all of your ingredients to a large (read: larger than you think!) bowl. Stir it all together and boom – you're done!
This chicken salad is best served cold so cover and chill in the fridge until you're ready to serve.
Grab your favorite tortilla chips or Fritos to dip!
Mexican Chicken Salad
Ingredients
- 4 cups rotisserie chicken, chopped
- 2 cups cheddar cheese, shredded
- 15 oz can black beans, rinsed and drained
- 4 oz can chopped green chiles
- 2.25 oz can sliced olives
- 1 medium sweet onion, chopped
- ½ cup sour cream
- ½ cup mayonnaise
- 1 oz pkg taco seasoning
- 1 pkg corn chips (optional)
Instructions
- In large bowl, combine all ingredients except corn chips.
- Cover and chill until ready to serve.
- Serve with corn chips, if desired.

This recipe is so fun and versatile, and take substitutions or additions so well! Don't like black beans? Skip 'em! Want to add something? Toss in some corn or diced red pepper. Like it spicier? Add some jalapeno. The possibilities are endless!
If you're watching calories, you can substitute plain Greek yogurt for the sour cream and mayo in this recipe.
If you want your dressing to be a little creamier, feel free to double up the dressing and mix ahead of time; then, combine the rest of your ingredients and mix in the dressing.
