Loaded Baked Potato Salad

If you’re looking to be the MVP at your next BBQ, this recipe needs to be at the top of your list! A twist on a classic, Loaded Baked Potato Salad grabs all your favorite flavors from a baked potato and melds them into the perfect side dish.

I love how easy this recipe is to make – just a few minutes of prep for an absolute rockstar of a dish! You can serve it warm or chilled, making it the easiest to put together for your next backyard party, potluck, or just to treat your family on a summer night.

Here’s how to make this delicious salad!

Ingredients:

  • Red potatoes (Note: these are the full-size red potatoes, not the babies!)
  • Bacon
  • Cheddar cheese
  • Green onion
  • Sour cream
  • Light mayo
  • Pepper

How to make potato salad

Start by washing and peeling half the potatoes and dice into bite-sized pieces. Add to a large stock pot and fill with water so that the water covers about 1.5″ above the potatoes. Bring to a boil and cook until the potatoes are tender (this usually takes mine about 25-30 minutes). Dump into a strainer and let cool a bit.

Meanwhile, cook your bacon and crumble or chop finely. I like to cook my bacon in the oven at 400 degrees for about 20 minutes so there’s less going on on the stove!

In a large bowl (larger than you *think* you need ), mix the sour cream, mayo, and pepper until completely combined. Then, add the potatoes, bacon, cheese, and green onions and mix well.

This loaded baked potato salad is so yummy served warm (aka no waiting time required!) or chilled so you can make ahead – one less thing to stress about day-of if you’re hosting!

Ingredients

  • 8 medium red potatoes, cubed (half peeled, half with skin)
  • 6 slices bacon, diced
  • 16 oz carton light sour cream
  • 1 cup light mayonnaise
  • ½ tsp pepper
  • 2 cups shredded cheddar cheese
  • 4 green onions, thinly sliced

Instructions

  • In a large pot, boil potatoes in salted water until tender; drain.
  • Cook diced bacon in a skillet until crisp, then drain on paper towels.
  • In a large bowl, combine sour cream, mayonnaise and pepper. Add potatoes, bacon, cheese and green onions, reserving a bit of cheese, onions and bacon to garnish the top of the potato salad.
  • Top with reserved cheese, onions and bacon before serving.
  • Serve while warm or serve chilled.
