Lemon Pesto Chicken Tenders Freezer Meal – Full of Flavor and Easy to Make!
There are few things I love more than being able to get a delicious dinner on the table for my family without having to do a ton of work to get it there. This recipe for lemon pesto chicken tenders is a PPP reader favorite because it is just so easy to prepare without sacrificing an ounce of bold, pesto flavor!
Simply combine a few ingredients in a bag and freeze. You'll be set for dinner later on with a yummy meal and happy bellies all around. Here's how to make this delicious dish.

- Chicken tenderloins
- Pesto (homemade recipe)
- Lemon juice
- Shredded mozzarella cheese
How to make Lemon Pesto Chicken
The beauty of this freezer meal is just how easy it is to prepare and get in the freezer! Five minutes of prep and you've got dinner covered any night of the week.
Grab a gallon-size Ziploc bag (the Freezer bags are a little thicker) and your bag stand. Add the chicken tenderloins, pesto, and lemon juice. Seal the bag and knead to combine all the ingredients.
Add the mozzarella cheese to a quart-size Ziploc bag and place both bags into another gallon-size bag. Label or add your Freezer meal mini card and freeze.
How to cook Lemon Pesto Chicken
When you're ready to cook your lemon pesto chicken, simply thaw in the refrigerator overnight.

Preheat the oven to 375°F and place chicken in a 13×9-inch baking dish. Cover with aluminum foil and bake 25-30 minutes. Remove the foil and sprinkle with shredded mozzarella cheese. Broil on high 1-2 minutes until the cheese is browned and nice and bubbly.
You can serve this chicken with rice or over pasta with extra pesto, if desired. Since this is a freezer meal and we're going for easy – I like to have a few bags of steamable veggies in the freezer so I can pop them in the microwave and have on the side!

Ingredients
- 10-12 chicken tenderloins (about 2 lbs)
- ½ cup prepared pesto
- 3 tbsp lemon juice
- ½ cup shredded mozzarella cheese
Instructions
- In a gallon size zip-top bag, combine chicken tenderloins, pesto, and lemon juice. Knead bag to combine ingredients. Add mozzarella cheese to a quart size zip-top bag and place both bags into another gallon size zip-top bag. Label and freeze.
- When ready to cook, thaw in refrigerator overnight.
- Preheat oven to 375℉. Place chicken in a 13x9-inch baking dish and cover with aluminum foil. Bake 25-30 minutes.
- Remove foil and sprinkle cheese over top of chicken. Bake another 5 minutes. Turn broiler to high and broil 1-2 minutes until cheese browns a bit.
- Serve with rice or over pasta with extra pesto, if desired.
