Smoky Slow Cooker Brisket
Are you a brisket fan? ME TOO. I was always on the hunt for a way to cook brisket that didn't require a ton of work because – hello! Busy working mom over here! This beef brisket recipe is absolutely to die for and doesn't require any special grilling or smoking tools. All you need to make this juicy, tender brisket is your trusty slow cooker!
We absolutely adore this recipe and rejoice when it comes up in the meal plan! Plus, since we truly are passionate about pinching our pennies, make sure to read below for all the ways to stretch one larger cut of meat into multiple meals throughout the week.

Ingredients needed
- Large beef brisket
- Yellow onion
- Salt & pepper
- Beef broth
- Ketchup
- Ancho chile powder
- Smoked paprika
- Ground cumin
How to make beef brisket in the slow cooker
Start by trimming your desired amount of fat from your brisket. (I say “your desired amount” because I know there are folks out there who love a fattier cut!)
Next, sprinkle brisket with salt and pepper and place in a 6 or 7-quart slow cooker. Top with thinly sliced onions.
In a bowl or measuring cup, mix one cup low-sodium beef broth, 1/2 cup ketchup, and remaining spices.
Note – you can easily scale back on the spices (mainly the chile powder) if your family doesn't care for a lot of spice.
Whisk the mixture together and pour over top of the onions and brisket. Do not mix.
Cover, and cook on low 10-12 hours. This one does require a longer cooking time but cooking it low and slow is so worth it! I like to have everything prepped the night before so I can easily put it together first thing in the morning and have it ready for our normal dinner time.
Remove the brisket for the slow cooker and let it stand about 15 minutes before slicing to serve. This ensures all those yummy juice have time to set so you don't end up with dry brisket.
Skim the fat from the liquid and serve the remaining juice as a gravy on the side. I like to serve this with our favorite BBQ sides like potato salad, macaroni salad, and cornbread.
Smoky Beef Brisket
Ingredients
- 6 lb beef brisket, trimmed
- ¾ tsp salt
- ¾ tsp pepper
- 1 large yellow onion, thinly sliced
- 1 cup low-sodium beef broth
- ½ cup ketchup
- 1 tsp ancho chile powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
Instructions
- Sprinkle brisket with salt and pepper. Place brisket in 6 or 7-quart slow cooker; top with onions.
- In small bowl, whisk beef broth, ketchup, chile powder, paprika, and cumin; pour over onions.
- Cover and cook on low 10-12 hours until brisket is very tender.
- Remove from slow cooker and let stand 15 minutes before slicing.
- Shred and reserve 4 cups brisket for brisket and black bean tacos recipe.
- Skim fat from cooking liquid. Serve remaining gravy with brisket.

What to make with leftover brisket
One thing I love about our menu planning system is that the weekly recipes often work together! For this slow cooker beef brisket, the recipe instructs you to reserve about four cups of shredded brisket.
Since this is such a large cut of meat (6 pounds is no joke!), you'll have a lot of leftover meat at the end. Although, if you have a house full of teenage boys you might have to swat some hands away in order to get your needed leftovers! 🙂

Simply combine your shredded or chopped brisket with a can of rinsed and drained black beans on the stove. Stir until everything is heated and nicely mixed.
Then, grab your favorite taco toppings and you've got the perfect taco night!
Some other yummy ways to use leftover brisket:
- Nachos – use your shredded or chopped beef and make sheet pan nachos! Start by lining a baking sheet with parchment paper and then a layer of your favorite tortilla chips. Evenly top the chips with the brisket and then add your family's favorite nacho toppings. We like to add corn, beans, salsa, and of course – cheese!
- Breakfast quesadillas – I love making quesadillas for breakfast with scrambled eggs and whatever meat we have on hand. This brisket is perfect for this. Just add some sour cream and salsa on the side and you're good to go.
- Meal prep – you can also make this slow cooker brisket on Sunday and prepare high protein lunches for the whole week. This is yummy by itself or served over quinoa, rice, or roasted veggies.
