Easter Cheesecake “Carrot” Pops

Make these cheesecake “carrots” for Easter this year! They will add a sweet, festive touch to your holiday celebration! They’re so simple to make, and honestly, they’re just as fun to make as they are to eat!

Ingredients and supplies:

  • Pre-made cheesecake (I got mine from Walmart)
  • Popsicle sticks
  • Orange candy melts
  • Green candy melts
  • Parchment paper
  • Piping bags (or Ziploc bags as a substitute)

Instructions:

  1. Freeze the Cheesecake: Start by freezing your cheesecake for a couple of hours to make dipping easier and mess-free.

2. Prepare the Green Stems: Microwave the green candy melts according to the package directions. Once melted, transfer the candy into a piping bag (or use a Ziploc bag if you don’t have one). On a piece of parchment paper, pipe the candy into shapes resembling “carrot stems” and allow them to harden.

3. Prepare the Popsicle Sticks: Dip the popsicle sticks into the orange candy melts and insert them into the top of each slice of cheesecake. This will help keep the cheesecake in place while dipping it into the melted candy.

Pro tip: Freeze your cheesecake first for perfect, no-mess dipping. The candy melts harden fast, so you’ll have these treats ready in no time!

4. Dip the Cheesecake: Once the popsicle sticks are securely in place, it’s time to dip the cheesecake slices into the orange candy melts. Use a tall glass to hold the melted candy for easy dipping, ensuring the entire cheesecake slice is coated. After dipping, let any excess chocolate drip off before placing the cheesecake on a piece of parchment paper to set.

5. Add the Green Stem: While the orange candy melt is still soft, place the green “stem” piece at the top of the cheesecake, just above the popsicle stick.

6. Add Texture: Drizzle more orange chocolate in a back-and-forth motion over the top of the cheesecake to create texture and make your “carrots” look even more festive!

These were so easy and fun to make, and they would be a lovely addition to your Easter table this year!

A Quick Sidenote:

  • I used a whole cheesecake, and let’s just say… I ran out of orange candy melts way quicker than I anticipated. If I were to do it again, I’d either go for mini cheesecakes (hello, bite-sized treats) or buy 2-3 bags of the orange candy melts to be safe. Just a heads-up!
