Creamy Cheesy Tortellini

This dish is packed with flavor and is delicious as-is, or easy to customize to your family's tastes and your grocery budget. For example, the last time I made this I only had smoked sausage on hand so I used it – I'm all about shopping my fridge and pantry first!
One thing I love about this recipe is the cook time. Since it only requires about three hours of cooking in the crockpot, I can get everything ready to go, dumped in, and set before I leave to grab my kids from school! That way, in that 4-7 pm chaos, I don't have to worry about making dinner. Such a win for our family!

Ingredients
- Italian sausage
- Yellow onion
- Frozen tortellini
- Spinach
- Diced tomatoes
- Tomato paste
- Cream cheese
- Chicken broth
- Italian seasoning
- Parmesan cheese
How to make creamy cheesy tortellini
This yummy slow cooker meal requires just a little bit of prep before dumping everything into your crockpot and letting it work it's magic.
Start by browning the Italian sausage on the stove until it's nice and crumbly; drain. You'll also want to dice your onion and cut your cream cheese block into squares.
Next, combine all ingredients except the parmesan cheese in your crockpot. Give it a good mix, cover, and cook on low 2 1/2 – 3 1/2 hours.
Note: if you're using fresh spinach, wait until about 30 minutes before serving to add this.
Top with fresh Parmesan cheese and serve with a nice salad and garlic bread on the side. Dinner is done!
Creamy Cheese Tortellini
Ingredients
- 1 lb Italian sausage
- ½ large yellow onion, diced
- 8 oz pkg frozen chopped spinach
- 28 oz can diced tomatoes
- 8 oz pkg cream cheese, cubed
- 1 ½ tsp Italian seasoning
- 19 oz pkg frozen cheese tortellini
- 3 cups chicken broth
- ¼ cup tomato paste
- ¼ cup Parmesan cheese, shredded (optional)
Instructions
- In large skillet, cook sausage and onion over medium-high heat until meat is browned and crumbly; drain.
- Add cooked sausage and remaining ingredients to 6-quart slow cooker.
- Cover and cook on low 2½-3½ hours until tortellini is cooked.
- Stir to make sure sauce is creamy before serving. Top with Parmesan cheese, if desired.
