Copycat Broccoli & Cheese Soup Recipe

Are you in the mood for some delicious comfort food? This one-pot Copycat Broccoli and Cheese Soup is so easy – not to mention delicious! This hearty soup is prepped and ready to cook in just 15 minutes. Since it is made on the stovetop in your Dutch oven it also cooks quickly. After using mine, I’m convinced everyone needs one! Aren’t they gorgeous?!

If you want to get extra fancy, you can serve this Copycat Broccoli & Cheese Soup in homemade bread bowls! These are SO SIMPLE and your family will love them! 

 

Here’s what you’ll need to make the Copycat Broccoli & Cheese Soup recipe:

• Olive oil
• Carrots
• Yellow onion
• Frozen broccoli florets
• Salt
• Garlic
• Chicken broth
• Half-and-half
• Dijon mustard (trust me on this one!)
• Sugar
• Hot sauce (it doesn’t make it spicy, it just adds a little extra flavor)
• Paprika
• Turmeric
• Sharp cheddar cheese
• Velveeta cheese
• Cornstarch

 

Instructions:

1. Heat olive oil in large Dutch oven over medium-low heat.
2. Add carrots, onions, broccoli, and salt, then cook on medium-low for 12-14 minutes.
3. Add garlic and stir until fragrant, about 1 minute.
4. Stir in broth, half-and-half, mustard, sugar, hot sauce, paprika, and turmeric. Turn heat to medium-high.
5. Add cheeses and stir until melted. Bring to boil, then return heat to simmer, stirring frequently.
6. Combine cornstarch and 11⁄2 tablespoons water to make slurry, add to soup, and simmer until thickened.

It's my favorite restaurant version of broccoli and cheese soup

Ingredients

  • 2 Tbsps olive oli
  • 1 cup carrots - shredded
  • 1/2 cup yellow onion - diced
  • 32 oz pkg frozen broccoli florets
  • 1 1/2 tsps salt
  • 2 cloves garlic - minced
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 1 Tbsp Dijon mustard
  • 1 1/2 Tbsps sugar
  • 1 tsp hot sauce
  • 1 1/2 tsps paprika
  • 1/2 tsp turmeric
  • 2 cups sharp cheddar cheese - shredded
  • 6 oz Velveeta cheese - cubed
  • 1 1/2 Tbsps cornstarch

Instructions
