I cooked the chicken enchiladas last nite. I thought I had all of the ingredients, but sadly nope. So, I had to tweek it just a bit. I didnt have enough cream cheese, but used what I had. And only had mozzarella and cheddar cheese. Still turned out amazing. Will be making this again.
