Mediterranean Chicken & Orzo Pasta Salad
This chicken and orzo pasta salad is packed with fresh Mediterranean flavor. This is one of my favorite dishes to whip up for a pot luck or barbecue because the ingredients meld so well together – this is always a crowd favorite. Or, make this for a fun change to your normal dinner schedule and wow your family with this tasty meal.

Ingredients:
- Grilled chicken
- Orzo pasta
- Marinated artichoke hearts
- Cucumber
- Grape tomatoes
- Kalamata olives
- Feta cheese
- Red onion
- Greek dressing
How to make this orzo pasta salad:
I love our Summer menu plan for many reasons, but I am especially delighted when one week of meals features a “double up” recipe. This means that earlier in the week we cooked the Chicken & Veggie kabobs recipe (yum!). That recipe instructs you to grill one pound of chicken extra a reserve it for this Mediterranean chicken and orzo pasta salad! Half the cooking is done ahead of time – perfect for busy nights.
Start by cooking the orzo pasta according to package directions – boiling for about 10 minutes. I like to rinse mine under cold water after cooking since you'll be mixing with other cold ingredients.
Next, chop and dice all of your respective veggies and toppings – cucumber, grape tomatoes, and red onion.
Combine all ingredients in a large bowl and top with about 3/4 Greek dressing (you can find this in the salad dressing section at the store). If you like additional dressing, feel free to add more!
Refrigerate the pasta salad for at least two hours before serving and enjoy cold.
Mediterranean Chicken & Orzo Pasta Salad
Ingredients
- 1 lb grilled chicken breasts, cut into bite-size pieces
- 1 ½ cups uncooked orzo pasta
- 6 oz jar marinated artichoke hearts, drained
- 1 ½ cups diced cucumber
- ½ pint grape tomatoes, halved
- ½ cup sliced kalamata olives
- ½ cup crumbled feta cheese
- ¼ cup diced red onion
- ¾ cup Greek dressing (or to taste)
Instructions
- Cook orzo according to package directions; drain.
- In a large bowl, combine all ingredients adding additional Greek dressing if needed.
- Refrigerate at least 2 hours before serving.
Note: Grilled chicken is reserved from chicken & veggie kabobs recipe.
