Mediterranean Chicken & Orzo Pasta Salad

Ingredients

  • 1 lb grilled chicken breasts, cut into bite-size pieces
  • 1 ½ cups uncooked orzo pasta
  • 6 oz jar marinated artichoke hearts, drained
  • 1 ½ cups diced cucumber
  • ½ pint grape tomatoes, halved
  • ½ cup sliced kalamata olives
  • ½ cup crumbled feta cheese
  • ¼ cup diced red onion
  • ¾ cup Greek dressing (or to taste)

Instructions

  • Cook orzo according to package directions; drain.
  • In a large bowl, combine all ingredients adding additional Greek dressing if needed.
  • Refrigerate at least 2 hours before serving.

Note: Grilled chicken is reserved from chicken & veggie kabobs recipe.
