French Onion Roast Beef

Ingredients for french onion roast beef:
- 4 lb shoulder roast or chuck roast
- 2 tbsps vegetable oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 4 large yellow onions halved and thinly sliced
- 2 whole garlic cloves
- 4 cups low-sodium beef broth
- 2 tbsps worcestershire sauce
- 1 tbsp red cooking wine
- 1 1/2 tsps dried thyme divided
- 1 french baguette cut into 1/2-inch slices
- 1 cup shredded gruyere cheese
How to make french onion roast beef:

Preheat oven to 325°F. Season roast with salt, pepper, and 1/2 teaspoon thyme.

Add oil to Dutch oven and heat until oil ripples and is hot. Add roast and brown for 4 – 5 minutes on each side.

Add onions, garlic, beef broth, Worcestershire sauce, cooking wine, and remaining thyme. Cover with lid and cook 3 1/2 hours.

Remove from oven, and turn oven to broil.

Shred beef into large chunks; top with sliced baguettes and cheese.

Return pot to oven, uncovered, and broil until cheese begins to brown, additional 1 – 2 minutes.

Ladle into bowls to serve.
While Cheree said she prefers the dutch oven method listed here on the recipe, Laura decided to give this one a try in her slow cooker! She has the Beautiful by Drew cooker with the sear function. She cooked on low 6 hours (with a 2 hour roast) and then did ramekins and put in the oven super quick to broil.
So just know the slow cooker is also a good option if you don’t want to run your oven for long – or you could even use a little torch to melt the cheese and skip the oven entirely!
