French Onion Roast Beef

Ingredients

  • 4 lb shoulder roast or chuck roast
  • 2 tbsps vegetable oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 4 large yellow onions halved and thinly sliced
  • 2 whole garlic cloves
  • 4 cups low-sodium beef broth
  • 2 tbsps worcestershire sauce
  • 1 tbsp red cooking wine
  • 1 1/2 tsps dried thyme divided
  • 1 french baguette cut into 1/2-inch slices
  • 1 cup shredded gruyere cheese

Instructions

  • Preheat oven to 325°F. Season roast with salt, pepper, and 1/2 teaspoon thyme.
  • Add oil to Dutch oven and heat until oil ripples and is hot. Add roast and brown for 4 - 5 minutes on each side.
  • Add onions, garlic, beef broth, Worcestershire sauce, cooking wine, and remaining thyme. Cover with lid and cook 3 1/2 hours.
  • Remove from oven, and turn oven to broil.
  • Shred beef into large chunks; top with sliced baguettes and cheese.
  • Return pot to oven, uncovered, and broil until cheese begins to brown, additional 1 - 2 minutes.
  • Ladle into bowls to serve.
