Peanut Butter Energy Bites

If you have a bit of sweet tooth but you’re working toward health goals, I have the perfect treat for you! These peanut butter energy bites keep you totally on track but FEEL like you’re eating dessert!

I love to whip up a batch of these energy balls for the week and keep them in the fridge. They’re fabulous to grab when you need a little something, and they’re full of nutritious ingredients that will help boost your energy instead of drain it – a win win!

Once you’ve made a batch, you’ll be hooked. My biggest tip? Hide them from your family if you want more than one.

Ingredients

  • Rolled oats
  • Unsweetened coconut flakes
  • No-sugar, no-oil added peanut butter
  • Ground flax seed
  • Semi-sweet chocolate chips
  • Honey
  • Vanilla extract

How to make Peanut Butter Energy Bites

I love how quick and easy these energy bites are to throw together. All you need to do is combine all your ingredients together in a large bowl and mix well. Then, you’ll cover and pop in the fridge for at least an hour. This helps keep your mixture from being too sticky to roll.

Then, use a cookie scoop (I used a 2″ scoop) or a spoon scoop and roll into a ball.

Keep in the fridge in an airtight container and enjoy as you see fit! 😉

Peanut Butter Energy Bites

Servings: 10

Ingredients

  • 1 cup rolled oats
  • cup unsweetened coconut flakes
  • ½ cup creamy peanut butter, no sugar and no oil added
  • ½ cup ground flax seed
  • ½ cup semi-sweet chocolate chips
  • cup honey
  • 1 tsp vanilla extract

Instructions

  • In large bowl, combine all ingredients. Cover and refrigerate 1 hour.
  • Using cookie scoop, shape into balls. Store in refrigerator.
  • Note: extended refrigeration time required.
