Parmesan Zucchini

It is roasted with a crusty parmesan flavor, and that makes this zucchini recipe delicious!

Ingredients for Perfect Parmesan Zucchini:
- 4 zucchini, quartered lengthwise
- ½ cup freshly grated Parmesan cheese
- ¾ tsp dried thyme
- ¾ tsp dried oregano
- ¾ tsp dried basil
- ½ tsp garlic powder
- salt and pepper
- 2 Tbsps olive oil or olive oil spray
If you don’t have zucchini you can use yellow squash like our reader Nancy did. Yum!
Here’s the full recipe for parmesan zucchini:
- Preheat the oven to 350°F. Coat a cooling rack with nonstick spray, and place onto a baking sheet; set aside.
- In a small bowl, combine Parmesan cheese, thyme, oregano, basil and garlic powder. Add desired amount of salt and pepper to taste.
- Place zucchini onto the prepared baking sheet. Drizzle with olive oil, and sprinkle with Parmesan cheese mixture.
- Bake until tender, about 15-20 minutes. Broil 3-5 minutes, or until crisp and golden brown.
