It tastes just like zucchini bread and the kids won't even know they're getting veggies with this delicious yellow squash bread.Â

Here's what you'll need to get started . . .
Yellow Squash Bread
Ingredients
- 3 eggs
- 2 cups white sugar
- 1/2 cup vegetable oil
- 1/2 cup of applesauce
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 3 tsp baking powder
- 2 tsp ground cinnamon
- 2 tsp ground nutmeg
- 2 cups shredded yellow squash
Directions
- Preheat oven to 325 degrees.
- Grease two loaf pans.
- Use an electric mixer to beat eggs until fluffy.
- Beat in the sugar, oil, applesauce, and vanilla.
- Gradually mix in flour, baking powder, cinnamon, and nutmeg.
- Fold in the squash.
- Spread evenly into two greased loaf pans.
- Bake 1 hour in preheated oven, until toothpick inserted in the center comes out clean.
