You all left some amazing recipe ideas last week, so I've been checking them out for a little inspiration! We tried out Chelsea's Zesty Slow Cooker Chicken this week, and then shredded up the chicken to make stuffed potatoes (I love stuffed potatoes!) This recipe is so simple, and smells absolutely delicious when you walk in the door at dinner time. . . my two favorite meal criteria! But the best part is, you can use FROZEN CHICKEN BREAST! NO THAWING REQUIRED! It's also great for leftover sandwiches, so you'll have dinner tonight and hopefully a few leftovers tomorrow. Thanks so much Chelsea for the idea – we loved it!
Here's what you'll need . . .
1-2 lbs. frozen skinless boneless chicken breast On Sale $1.99/lb. at Kroger or $2.99/lb. at Publix
1 12 0z bottle Barbeque sauce Kraft Barbecue Sauce, Assorted Varieties, 16.25 or 18-oz bot BOGO $1.48
1/2 cup Italian salad dressing Kraft or Seven Seas Dressing or Good Seasons BOGO $3.19 , Use $0.55/1 Kraft Dressing 8/29/2010 SS Insert (exp 10/24/2010)
1/4 cup brown sugar $.30/1 Domino Sugar or $0.50/2 Domino Sugar Products 8/29/2010 RP Insert
2 tablespoons Worcestershire sauce $.50/1 French's Worcestershire or $1/1 Lea & Perrins Worcestershire
Gold Potatoes 5 lb. bag $2.49
Cheddar Cheese Kraft Chunk Cheese, Cracker Cut, Cubes, or Shredded 4.5-8 oz 2/$4
$1/2 Kraft or Cracker Barrel Natural Cheese, Shredded or Chunk 2010-8-24 Kraft (exp 12/31/2010)
Sour Cream Breakstone’s Sour Cream 16 oz tub $1
Place chicken in slow cooker. In a bowl, mix the barbecue sauce, salad dressing, brown sugar and worcestershire sauce. Cook and cover 3 to 4 hours on high or 6 to 8 hours.
Bake potatoes in oven (or in microwave if you're in a hurry! I've found that mine taste best in the oven when I coat with a little olive oil and kosher salt before baking.)  Shred up chicken in crockpot, then top with sour cream and cheese. You can also serve the chicken in pieces with a side of potatoes if you'd like! 🙂

Oops, I just put this in the slow cooker but put the whole bottle of Italian dressing! Gotta start reading more carefully. Hopefully it will still taste ok!
