What’s For Dinner? Easy Veggie Calzones


As I mentioned earlier, during back to school week my kids each get to pick their favorite meal for dinner, so you all are along for the ride!  When I asked my son what he wanted he requested homemade bread.  (period).  No noodles, no meat, no potatoes, no veggies (of course!), just bread. 

Well, we had bread, but we also made these calzones and they were sooooo good!  I've never tried making calzones at home before but when my friend suggested it I knew we had to try it out!  If you haven't use the Publix Pizza Dough before it's really yummy, just look for it in the refrigerated case in your bakery area.  We made four which was more than enough at our house, so you could easily half the recipe if you need to.  Here's what you'll need . . .

2 Round Italian Pizza Dough 16 oz $1.79 $1/1 Archer Farms Bakery Item Target coupon (if your store accepts Target as a competitor)  

2 cups Tomato Sauce, plus extra for dipping!  Prego BOGO $2.07, $1/2 Prego Italian Sauce Jars, or $1/2 Prego Italian Sauce Publix Save Big Dream Big Booklet (exp 11/30/2010)

1 tablespoon Italian Seasoning

1 1/2 tsp. garlic powder

2 cups mozzarella cheese Kraft on sale $2

1 tablespoon olive oil

1 egg

1 tablespoon water

Toppings (optional) – We used green peppers and onions, but I think my hubby would have been happier if I had added in some pepperoni!


Preheat oven to 350.  Seperate each dough round in halves.  Roll out into 4 9″ circles, set aside.  Saute mushrooms, onion, and green pepper in olive oil until onions are transparent.  Add Prego, italian seasoning, and garlic powder, and heat through.

Season calzone dough with a little salt and pepper (optional).  Top each calzone with 1/2 cup sauce, 1/3 cup cheese (use more if you'd like!), and pepperoni (optional).  Fold calzone over, seal (use a little water to help seal).  Whisk together egg and water, brush over pastry.  Bake in preheated oven for 20-25 minutes, until golden brown.  (Tip:  these are very thick, so don't undercook . . . but don't overcook either!  I tend to undercook breads, but this I'm glad I waited on this one!)  Serve with extra marinara sauce for dipping!

You can also freeze these, so if you make four and it's way too much (like at our house!), wrap tightly in plastic wrap and place in plastic ziploc bag.  To reheat, bake at 350 for 30-35 minutes (or until heated through).  Enjoy!
