I spent all day yesterday going back and forth about trying this recipe out for dinner, but I'm SO GLAD I DID! It was FABULOUS! Who knew that tuna works with tomatoes? (I sure didn't.) And, it's so good for you . . . and easy . . . what more could you ask for? I was thrilled!
When I saw it over on Eatin'on the Cheap, I knew it was the perfect recipe for the sale ad this week, but I really didn't expect to like it. I made a few changes because of what was in my pantry and to adjust for our family size, but it was super yummy, and works so well with this week's sale ad. (Really, how often do you get dinner for a family of 5 for under $5, including garlic bread AND salad? And it'll be even less if you have some of the items in your stockpile!)
Here's what you'll need . . .
1 large onion, finely chopped
3 cloves of garlic, minced (I used 1/2 teaspoon garlic because I didn't have any fresh garlic, but I recommend grabbing some garlic!)
2 tsp olive oil
Pompeian Olive Oil BOGO $6.99, Use $1/1 HERE
2 cans diced tomatoes (14 1/2 oz.)
Del Monte Canned Tomatoes BOGO $1.39, use $1/8 from 3/21 SS (expires 5/16/10)
1 5 oz. can tuna in water (drained) or two 2.6 oz. pouches tuna (I used the pouch tuna and it worked great, but I think the canned would be perfect as long as you make sure to drain it well)
Bumble Bee Tuna 4 pack BOGO $3.99, use $.55/1 or $1/2 from 2/21 SS or $.55/1 Blinkie
2 teaspoons Italian Seasoning
$.50/1 McCormick's Seasoning or Spice from 4/25 RP
1 1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoon crushed red pepper
8 oz. angel hair pasta (we used stockpiled Buitoni from a few weeks ago)
Ronzoni Pasta On Sale $.79, look for $.50/1 Blinkie or Tearpad
4 tsp. ricotta (optional)
$1/2 Sorrento from 3/21 SS or $.50/1 Maggio Ricotta Cheese from 3/28 SS
Boil water and cook pasta. In large saucepan, heat olive oil and add onion, cook until onion is transparent. Add garlic and drained tomatoes, simmer for three to four minutes. Add in drained tuna and red pepper flakes, salt, pepper and italian seasoning. Let simmer five minutes or until pasta is cooked. Drain pasta and spoon sauce over pasta. Top with a dollop of ricotta – enjoy!
