What’s for Dinner? Pork Chop & Feta Cheese Skillet

Looking for a little twist on a plain old pork chop?  Well if you like Feta Cheese, try these pork chops out!  My husband came in, lifted the lid on the skillet, and said “oooooh, fancy food”  (can you tell we're pretty plain old around here?)  The great thing about the recipe is it's so easily adaptable for your family – I made the feta version for my hubby and myself, and kept the kiddos version plain, so we were all happy! 

Here's what you'll need . . .

1 teaspoon dried rosemary

1 teaspoon dried basil

1 teaspoon minced garlic

1 pinch black pepper

2 tablespoons olive oil

4 pork chops Pork Rib Chops $2.99/lb.

1 cup fresh lemon juice I used a lemon from Publix at $.50, when you're done check out Tonya's comment on how to clean out your microwave using a lemon (I tried it out with what was left of the lemon and it worked great, thanks Tonya!) 🙂

1/2 cup crumbled feta cheese with basil & sundried tomatoes Athenos Basil & Tomato Feta Cheese BOGO $2.69, use B1G1 Athenos Feta Cheese Product

In bowl, mix together first four ingredients.  Heat olive oil in skillet over medium heat.l  Dip pork chops in lemon juice, and then season both sides with herb mixture (I very lightly seasoned my kids pork chops).  Place pork chops in skillet, and cook on both sides, about 7 minutes or so, depending on the thickness of your pork chop.  Reduce heat to low & sprinkle feta on top of the pork chops.  Cover skillet and cook until cheese starts to melt – about 5 minutes.
