What’s for Dinner – Grilled Pantry Pork Chops

I posted this one back in April and while I hate to re-post stuff, something’s gotta give this week!  (Maybe next week too – I promise I’ll get it together once things settle down around here – at least I hope!)  But this really is a super yummy pork chop recipe, so if you haven’t tried it yet you should try it out.

This recipe is from Weber’s Big Book of Grilling, which is by far our favorite grill cookbook.  We’ve never made anything from it that hasn’t turned out well, so I highly recommend it!  Here’s all you’ll need . . .

1/4 cup plus 1 tablespoon fresh lemon juice (I’ve never had fresh, so I just use the kind in the bottle!)

3 tablespoons soy sauce

1 tablespoon extra virgin olive oil

1/2 teaspoon light brown sugar

1/4 teaspoon chopped fresh rosemary

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

4 pork chops, about 1 1/4 inches thick each

In a medium bowl whisk together everything except the pork chops.  Place pork chops in large bag, pour in the marinade.  Press air out of the bag and seal tightly.  Turn the bag to distribute the marinate, place in bowl and refrigerate for 20 to 30 minutes.  Remove the chops from the bag and discard the marinde.  Allow to stand at room temperature for 20 to 30 minutes before grilling.  Sear the chops over direct high heat for 6 minutes, turning once halfway through searing time.  Continue grilling over indirect medium heat until juices run clear.  Season with salt and pepper, serve warm.
