Happy Day 1 of the Ultimate Grocery Budget Challenge!
If saving money at the grocery store is on your 2018 I-really-need-to-do-this-list, this is just for you.Â
It's so easy to let go of our financial reigns during the Christmas season, not stick to a menu plan, and spend way more than we need to at the grocery store. But, today's the day to get back on track ~ and I'd sure love for you to join me.
Here's what you need to do TODAY to join the challenge:
1. Sign up HERE for our Free Ultimate Grocery Budget Challenge.Â
2. Complete the Day 1 Worksheet, 5 Mistakes You're Making at the Grocery Store.
3. Determine to go on a Spending Freeze until Friday if you're able. (If you need to pick up a few staples make a grocery list and shop only using items on that list.)
4. Invite a friend to join you (I promise, you'll save so much more if you get a friend involved too!) BONUS? If you share this video with them on Facebook you'll be entered to win an Instant Pot!
5. Decide how much you want to save this week at the grocery store, and pick exactly where that saved money will go.
During today's Facebook Live I shared how for a season, it may be time to skip buying the fancy stuff that you're paying too much for at the grocery store (like those pretty hydrangeas I picked up today.)
As I shared in the video, I'm not saying that for the rest of your life you can never-ever-never splurge on fancy things like fresh flowers or pre-cut fruit at the grocery store. (Promise!)Â
I'm just saying that for this season ~ you (and I!) can choose to “suck-it-up-buttercup” and choose that what we really want (to pay down debt, have more money at the end of the week, or maybe travel more) instead of settling for what looks pretty fun right now.

And if you saw today's Facebook Live, here's the recipe I almost didn't survive making in the Instant Pot: 🙂 (It really is yummy, I'm just crummy at using that crazy Instant-Pot-thing-a-ma-bopper . . . eek!)Â
Instant Pot Mongolian Chicken Lettuce Wraps
INGREDIENTS
- 3-4 boneless skinless chicken breasts, cut into 1″ cubes
- 2 T olive oil
- ¾ cup brown sugar
- ¾ cup soy sauce (lite)
- 2 tsp minced garlic
- 1 cup water
- 1 T garlic powder
- 2 T corn starch
- ¼ cup water
- Optional – green onions & sesame seeds
- Optional – broccoli slaw, lettuce, or rice to serve with chicken
DIRECTIONS
- Set Instant Pot to high “saute” setting and wait to heat up.
- Pour olive oil into Instant Pot, then saute chicken breast until lightly brown.
- Add in brown sugar, soy sauce, minced garlic, 1 cup water, and garlic powder to Instant Pot
- Close lid on Instant Pot and cook at High Pressure 10 minutes then pressure naturally release for 10 minutes.
- Allow any additional pressure to release and open lid on Instant Pot.
- Whisk together 1/4 cup cup water and corn starch.
- Select saute function again and add in corn starch mixture. Cook for 3-4 minutes, until sauce is bubbling and thickened.
- Serve over lettuce and add sesame seeds + broccoli slaw, or serve over rice
Tomorrow we'll dive into the nitty gritty details and determine how much you're REALLY spending on food, which I'm betting will be more eye opening than you think (I know it is for me!)
