This delicious potato frittata is absolute perfection for brunch or a fun breakfast for dinner! It's easier than you think to make – here's how!
Perfect Potato Frittata
When we were naming this dish for our new Whole Foods box, we didn't want to overstate just how yummy this one is – so we didn't! This Potato Frittata really is just perfect.
Using only clean, whole food ingredients, you can feel good about eating this yummy meal and I promise you, it is not as hard as you think to make! I know sometimes egg dishes or even just the word “frittata” can be a little intimidating, but this one is so easy to make with just a couple extra prep steps.

I love this recipe for hosting brunch because it is so pretty once baked! But, it's also so yummy for a filling breakfast-for-dinner any day of the week for your family. Pair it with your favorite breakfast meat and fruit and you are set.
Here's how to make this Perfect Potato Frittata.
Ingredients for a Potato Frittata
- Butter
- Baking potatoes
- Eggs
- Shredded cheese – both cheddar and Swiss
- Sour cream
- Chopped chives
- Tomato
- Grated Parmesan cheese
- Salt & pepper
How to make Potato Frittata
Start by preheating your oven to 400°F and coating a 9″ quiche pan or deep-dish pie pan with cooking spray.
Next, peel your baking potatoes and slice thinly. You can use a sharp knife for this, but a mandolin slicer like this one makes this job much easier.
Melt one tablespoon butter in a large skillet. Add the potatoes, and sauté until they're nice and tender. Sprinkle with salt. Transfer your potatoes to the prepared pan.
In the same skillet, melt the remaining butter and add your eggs. Soft scramble the eggs, leaving them fairly liquid.
Meanwhile, spread half the cheddar and Swiss cheese over the potatoes, making a thin layer. Next, spread the sour cream over the cheese, and top with chopped chives. Add the scrambled eggs, and top with the remaining shredded cheddar and Swiss cheese.
Circle the quiche pan with tomato slices. Note: You can cover the top completely with tomato, or make a ring around the edge – this is personal preference! Top with Parmesan cheese.
Bake about 35 minutes until cheese is puffy and slightly browned. Serve warm and enjoy!

- 2 tbsp butter, divided
- 2 medium to large baking potatoes, peeled and thinly sliced
- 6 large eggs, beaten
- 1 cup shredded cheddar cheese, divided
- ½ cup shredded Swiss cheese, divided
- 1 cup sour cream
- 2 tbsps fresh or freeze dried chopped chives
- 1 large tomato, peeled and sliced
- 2 tbsps grated Parmesan cheese
- salt and pepper
Instructions
- Preheat oven to 400℉. Coat a 9-inch quiche pan or deep-dish pie plate with cooking spray and set aside.
- In a large skillet, melt 1 tablespoon butter over medium heat. Add potatoes and sauté until tender. Sprinkle with salt to taste.
- Transfer potatoes to prepared pan.
- In the same skillet, melt the remaining 1 tablespoon butter and soft scramble the eggs, leaving them fairly liquid. Salt and pepper to taste.
- Spread half of the cheddar and Swiss cheese in a thin layer over potatoes. Spread sour cream over cheese, and sprinkle with chives. Add eggs, and top with remaining cheddar and Swiss cheese.
- Circle quiche pan with tomato slices and sprinkle with Parmesan cheese.
- Bake approximately 35 minutes until cheese is completely puffy and slightly browned.
- Slice and serve.
