Gooey Butter Cake

This Gooey Butter Cake recipe is one of those tried-and-true treats that everyone should enjoy at least once (maybe twice?) each year.  My wonderful step-mom (who's the best cook and one of the sweetest people I know!) shared the recipe with me forever ago, and every time I make it my hubby reminds me I need to bake it more often.


The best part is it calls for only six ingredients, which you might just have already in your kitchen. It's also a great way to use up all those bargain cake mixes that you may have stocked up on with coupons throughout the year, so you'll be putting those penny-pinched deals to very good use. 😉 Here's how to get started . . .


Gooey Butter Cake

Gooey Butter Cake


  • 1 yellow cake mix
  • 1 egg
  • 1 stick butter, melted
  • 8 oz. cream cheese, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 2 eggs


  1. Mix together a egg, cake mix, and butter. Press into bottom of greased 13x9" pan.
  2. In mixer, blend together cream cheese, 2 eggs, powdered sugar & vanilla.
  3. Pour cream cheese mixture over cake mix.
  4. Bake at 350 for 40-45 minutes.

  1. LOVE this recipe! It’s a treasured one I got from my grandmother and this simple bar cake is always a huge hit at office potlucks or I need to take a dessert to a function. It’s so easy but so rich and gooey.

    My grandmother did have one little tweak to the recipe; she added 1 tablespoon of lemon juice to the cream cheese mixture to give a little contrast to the sweet.

    Also, this recipe works great with a chocolate cake mix as the crust.

  2. Gooey butter cake was something that my Grandmother used to buy every summer at a specific bakery on our way from St. Louis to IL to visit my cousins. It took every bit of my weak little self to not eat the entire thing the first morning for breakfast!!
    For years people would look at me crazy when I’d ask if they had gooey butter cake. When I finally found a recipe I feared making it cause I may not have the self restraint now that there’s no one to scold me if I DID eat the entire thing (except maybe my husband when he didn’t get a piece or was having to nurse me back to health from the sugar coma! LMAO)
    Anyway I broke down and made this to take to my mom’s for Christmas and it was a huge hit. I got the stuff to make a chocolate one too and have that one in the oven tonight, can’t wait to give it a try. Hopefully I can pace myself! LOL 😀

      I grew up in St. Louis and Mom got Gooey Butter Cake from Krogers. Its a wonderful memory! So glad I found this recipe – I’m making it for my Dad’s memorial dinner!

      P.S. I always thought the name was something my family made up!
