I had such good intentions of coming up with a recipe that matched up perfectly with the Publix Sales ad this week . . . and then my littlest came down with the flu, meaning she and I didn’t move from the couch for two days.  (I hated that she was sick, but soaked up every second of extra snuggle time while she was home from school!) Thankfully she healed up very quickly, but making a trip to Publix before cooking dinner this week just wasn’t going to happen.

 

However, thanks to our stockpile, we still had plenty right here at home to work with.  I’d been wanting to try out this Cream Cheese Stuffed Chicken Recipe (adapted from the Happy Lil Homemaker), and figured this was just the week to make it.  It was quite a bit more work than I expected (read: waaaaayyy more work than I was up for. . .), but the results were delicious, and my hubby deemed it worth the extra effort! Y’all know my favorite thing to do for dinner is dump a bunch of ingredients in Mrs. Potts and let her do the work, but this was a nice way to give her the day off. 😉

 

Here’s the recipe so you can enjoy it too. . . plan a little extra prep time (maybe 20 minutes?) but then you’ll enjoy one very yummy dish.

 

Cream Cheese Stuffed Chicken

Ingredients

  • 4-6 boneless skinless chicken breast
  • 4 oz. cream cheese softened
  • 1 tbsp. parsley
  • 1 tbsp. minced onion
  • 2 tsp. lemon juice
  • 1/2 tsp. garlic salt
  • 1/8 tsp. pepper
  • 1 egg beaten
  • 1/4 cup flour
  • 1/2 cup corn flake crumbs or saltine crumbs
  • olive oil

Instructions

  • Preheat oven to 360.
  • Flatten chicken by placing it between two sheets of parchment paper and rolling to 1/4" thickness. (I didn't have parchment paper so I just used a plastic bag.)
  • In mixing bowl, mix together cream cheese, parsley, minced onion, garlic salt, pepper and lemon juice.
  • Put 1 tablespoon cream cheese mixture on each piece of chicken (depending on size of chicken, mine were fairly small so 1 tablespoon was plenty.)
  • Roll chicken.
  • Dip chicken in egg, then dredge in flour, and coat with crumbs.
  • In skillet, drizzle olive oil.
  • Cook chicken over medium heat just to lightly brown on all sides.
  • Place chicken in baking dish and bake for 30 minutes at 350 or until juices run clear.
  • Enjoy!

    I’ve made this before and my family loved it! Now I’m making it for dinner on Valentine’s Day, but w/ a little extra of the filling on the side, too. Very easy! 🙂

      NOOOOOOOO Kelli! I’ll go fix it…. I love garlic as much as the next person but that would (obviously!) be way too much. 1/2 tsp will be just fine! Thanks for letting me know 🙂
