Preheat oven to 360.
Flatten chicken by placing it between two sheets of parchment paper and rolling to 1/4" thickness. (I didn't have parchment paper so I just used a plastic bag.)
In mixing bowl, mix together cream cheese, parsley, minced onion, garlic salt, pepper and lemon juice.
Put 1 tablespoon cream cheese mixture on each piece of chicken (depending on size of chicken, mine were fairly small so 1 tablespoon was plenty.)
Roll chicken.
Dip chicken in egg, then dredge in flour, and coat with crumbs.
In skillet, drizzle olive oil.
Cook chicken over medium heat just to lightly brown on all sides.
Place chicken in baking dish and bake for 30 minutes at 350 or until juices run clear.
