Caprese Chicken Skillet Recipe
This is one of my FAVORITE ever recipes from the PPP Menu Plans, and I know you'll love it too! This Caprese Chicken Skillet is super easy to make, tastes AH-MAZING, and is seriously restaurant quality food. The best part? It has only 358 calories and 3 net carbs. Success!

Ingredients for Chicken Caprese Skillet
- Boneless chicken breasts
- Olive Oil
- Marinara Sauce
- Fresh mozzarella cheese
- Grape tomatoes
- Fresh basil
- Balsamic Glaze
How To Make Chicken Caprese
Start by cooking your chicken in a large cast-iron skillet over medium heat. You'll need about four minutes per side. Once all your chicken is cooked (you can cook in batches if needed), spoon marinara sauce over and around the chicken. Cook an additional five minutes or until your chicken is done.
Next, layer your sliced mozzarella cheese over each chicken breast. I had enough to put about two slices per chicken breast. Then, sprinkle your halved grape tomatoes over top.
Broil in the oven for two minutes or until the cheese is a nice golden color and bubbly. I can just SMELL it now!
Finally, sprinkle your fresh basil over the entire skillet and top with the balsamic glaze for serving.
Caprese Chicken Skillet
Ingredients
- 2 ¼ lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 24 oz jar marinara sauce
- 8 oz ball fresh mozzarella cheese, thinly sliced
- 1 pint grape tomatoes, halved
- 1 oz pkg fresh basil, thinly sliced
- 1-2 tbsp balsamic glaze
Instructions
- Preheat oven to broil. In a large cast-iron skillet, cook chicken in hot oil over medium heat, 4 minutes per side. Cook in batches, if needed.
- Return all chicken to skillet and spoon marinara sauce over and around chicken; cook another 5 minutes or until chicken is done.
- Layer mozzarella cheese over each chicken breast; sprinkle with tomatoes.
- Broil 2 minutes or until cheese is bubbly and golden.
- Sprinkle with basil, and drizzle each serving with balsamic glaze to serve.
