How to make Blackened Tilapia Fish Tacos:
Start by prepping and preheating your grill to high. Next, rinse and pat dry the tilapia filets. Spray one side of each filet with your cooking spray. If you don't have cooking spray on hand, you can rub with olive oil or melted butter. Sprinkle desired amount of blackening seasoning on each filet. You can tailor the spice to your family's taste here! Flip the tilapia filets over and repeat.
Generously oil your grill basket or grill grates. Place fish onto preheated grill. Tilapia cooks quickly so make sure to keep an eye on it! Grill about 2 minutes, flip, and grill 2 more minutes or until flaky.
While the fish cools, make your slaw topping. In a large bowl, toss the slaw and ranch dressing. You'll need enough dressing to coat without being runny.
To serve, place half of one filet on a tortilla and top with desired amount of slaw. Enjoy!
