Homemade Cosmic Brownies

What is it about a Cosmic Brownie that is so nostalgic? If you had one tucked into your lunchbox as a kid, it could instantly turn your whole day around. AmIright?

So when we saw this copycat recipe trending online, we had to try it.

This homemade version has everything you remember, only better. They’re dense, fudgy, covered in a rich chocolate ganache, and finished with the classic rainbow candy chips for the ultimate dessert.

The best part is there are no mystery ingredients or preservatives, just simple pantry staples you likely already have on hand.

Ingredients:

Brownies

  • 10 tablespoons unsalted butter, melted
  • 1 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 eggs, plus 1 egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 3/4 cup all-purpose flour, spooned and leveled

How to make Homemade Cosmic Brownies:

Preheat your oven to 325°F. Line an 8×8-inch baking pan with parchment paper and lightly grease it.

In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.

Add the eggs, egg yolk, and vanilla extract. Mix until well combined.

Stir in the cocoa powder and salt.

Gently fold in the cornstarch and flour until just combined. Be careful not to over-mix.

Pour the batter into the prepared pan and spread it evenly.

Bake for 30–40 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs (For reference, in my oven it took about 32 minutes). Try to avoid over-baking.

Allow the brownies to cool completely before adding the ganache.

Make the Ganache:

Combine the chocolate chips and heavy cream in a microwave-safe bowl.

Microwave in 15-second intervals, stirring after each interval, until the mixture is smooth and glossy.

Pour the ganache over the cooled brownies and spread evenly.

Sprinkle generously with the ICONIC rainbow candy chips.

Chill the brownies in the fridge for 1–2 hours, or until the ganache is set. Then slice and enjoy!
