What’s for Dinner? Cucumber Onion Dressing (with some kind of meat, of course . . .)

A friend recently brought me  a bunch  of cucumbers, and while I hate throwing food away I was tempted to because I don’t really like cucumbers all that much!  Until my wonderful sister-in-law brought this to our 4th of July feast! 

This is so easy, super healthy, really cheap, and it’ll use up a few cucumbers from your garden (or just grab some at the store).  Here’s all you’ll need .  . .

3/4 cup water

1/4 cup vinegar
$0.50/1 Heinz Vinegar or Apple Cider Vinegar
$1/2 Heinz Vinegar 32 oz or smaller 6/27/2010 SS Insert (exp 8/31/2010)
$1/1 Publix Smart Savings Booklet (exp 7/31/2010)

3/4 cup sugar
$0.40/2 C&H Sugar, 2 lb
$0.30/1 Domino Sugar Product, 2 lb +

1-2 cucumbers, sliced
Seedless cucumbers on sale $1 at Kroger or 2/$.99 at Winn Dixie, also check out local farmer’s market prices!

1 white onion sliced

Mix first three ingredients.   Put cucumbers and onions in bowl, pour vinegar mixture over top.  Refrigerate for 3+ hours.   Serve!

What’s really great about this is that you can just keep adding cucumbers and onions throughout the summer!  So your tiny investment in the other ingredients won’t even go to waste – what a deal!
