I have to confess – I'm not big on using ground turkey, but since it's at such a good price this week (and it's a little healthier than ground beef), we're going to give it a try! This is finally a little healthier meal thanks to the ground turkey and light sour cream and cheese, and we can definitely use that too.
I found this recipe over at All Recipes (have I mentioned that I love All Recipes?) and changed the ingredients a little based on some comments. It'll be super cheap this week, and an easy dinner to throw together on a busy night (I think every night is busy at our house! Maybe every moment!) Here's the recipe:
Turkey Burritos
1 pound ground turkey
On Sale $1.99/lb.
8 oz. can tomato sauce
Contadina Tomato Sauce Advantage Buy $.99; Use $.75/3 HERE (Advantage Buy ends 2/5)
10 oz. can Ro-Tel
Use $1/2 from Advantage Buy Flier (Advantage Buy ends 2/5)
1/3 cup medium salsa
1 tablespoon chili powder
1/2 teaspoon onion powder
1 (15.25 ounce) can whole kernel corn, drained
1/2 small onion, diced
1 (16 ounce) can fat-free refried beans

1 (16 ounce) container fat free sour cream Breakstones On Sale $.99, USe $.55/1 or 1/2 from 1/24 SS: $1/2 HERE or $.55/1 HERE
3/4 cup shredded reduced-fat Cheddar cheese
Kraft Shredded Cheese On Sale $2; Use $1/2 HERE or from 1/3SS or 1/24SS
6 (10 inch) flour tortillas
$.75/1 Mission flour tortillas from 1/10 SS or $1/1 Guerrero tortillas HERE (Note – You have to register and the site is in Spanish – brush up on your high school Spanish class!) The Mission Tortillas are usually priced under $1.50, so this should make for a pretty good deal!
Directions
In a large skillet over medium high heat, brown ground turkey. Stir in tomato sauce, ro-tel, onion powder, chili powder, corn and onion. Reduce heat to medium and let simmer, stirring occasionally, until liquids reduce (about 20 minutes).
In a separate medium skillet, heat beans over medium-low heat. Prepare sour cream and cheese for sprinkling into burritos. One by one, heat tortillas over stove burner for 1 to 2 minutes, flipping a few times. Top with beans, then meat mixture, then sour cream and cheese. Fold over and serve while still warm.
Calories – 590 per burrito – that still sounds like quite a few to me!
