Easy Tortilla Pizza in the Oven
Jamie here! I often find myself craving pizza… but with no pizza in sight. But I recently found a solution that makes my work-at-home lunches so much happier!
Want a thin crispy crust pizza in five minutes? This tortilla pizza is going to be your new favorite go-to recipe! Anyone can make this oven pizza, from college kids to busy mamas – it's incredibly quick and super yummy!
What Tortillas Make the Best Pizzas?
When doing low-carb I eat this for lunch A LOT. I use these low carb whole wheat tortillas along with a low carb pizza sauce and come out at about 4 net carbs.  I make flour tortilla pizzas for my kids too – and those turn out perfectly! The only ones you won't want to use are corn tortillas.
How to Make a Tortilla Pizza
Many recipes will tell you to use a 400 degree oven – but not me. I'm going to have you use the broiler on your oven because it crisps up the pizza SUPER QUICK, much like a grill would. But you will need to watch your tortilla like a hawk to make sure it doesn't burn! There's a very fine line between extra-crispy with some “artisanal browning” – and charred.
What you need:
- Tortillas
- Baking Sheet
- Olive oil or cooking spray
- Parmesan, Mozzarella or Other Cheeses
- Pepperoni, Sausage, Bacon or Other Meats
- Mushrooms, Olives, Peppers, etc…
How To Make a Tortilla Pizza in the Oven:
This easy recipe is about 6 steps and 6 minutes long. It'll be on your plate before you can get hangry!
1 . Spray a tortilla with cooking spray or brush with olive oil on both sides. (Add a light sprinkle of garlic salt and pepper if you like!)
2 . Put the tortilla on a cookie sheet and put it on the top rack of your oven on Broil. Broil for just a few minutes until done, checking constantly.Â
(Broil is when only the top heating element cooks at a very high temperature, much like a grill. If you've never used it before – I want to warn you that anything you put under it will get toasty really quickly – so be peeking at it every couple minutes!)
3 . When it's brown and crispy, pull it out a spread pizza sauce on it.
4 . Follow with shredded or sliced cheese and any meat and veggie toppings you like.Â
Get creative with your cheeses and pizza toppings – here are some fun combinations to try!
- Gouda and prosciutto
- Parmesan, Provolone and bacon
- BBQ sauce, chicken, red onions and cheddar
- Veggies? I don't know y'all – mushrooms are as close as I get to veggie pizza but leave your suggestions!
- Taco toppings with Salsa instead of pizza sauce
Let the whole family invent their own personal pan pizzas by setting out a toppings buffet.
5 . Pop your pizza back under the broiler for just another few minutes until the cheese is melted.
6 . Slice with a pizza slicer and enjoy!
TIP: I've found that it helps prevent the edges of the tortilla from burning if I spread my pizza sauce allll the way to the edges.
How To Make a Tortilla Pizza in a Toaster Oven:
You can cook these little pizzas in toaster oven if you're just making one or two! Just use the broil function in the toaster oven just like you would in the toaster.
I make bunch of these at a time and flash freeze for my children. Store in a plastic baggie with wax paper between.

You say the top rack for the broiler. What if the broiler is the drawer of your oven like mine… I have to sit on the floor to use it. would it cook the same?
