Here's how to make Starbucks copycat egg bites at home – all the yummy flavor and a fraction of the cost!

These Copycat Egg Bites taste exactly like the egg bites from Starbucks without the cost! They're packed full of delicious bacon, Gruyere cheese, and have the perfect custardy texture we all know and love. (P.S. we have a secret to getting that texture just right – make sure to read below!)
Listen – I love hitting up the Starbucks drive- thru for a latté and breakfast as much as the next gal. But, our goal here is to avoid those fast food drive-thrus as much as possible and stick to a budget. That's why this recipe is going to absolutely blow your mind and keep you out of that Starbucks line for good!

Ingredients for Starbucks Egg Bites
- Bacon
- Eggs
- Cottage cheese
- Gruyere cheese (or a Gruyere blend)
- Cornstarch
- Salt
- Pepper
- Hot sauce
How to make copycat Starbucks egg bites
Start by putting a pot of water on the stove to boil, and preheating your oven to 350°. Make sure oven racks are in the lowest and middle positions.
Once the water is boiling, carefully pour into a 13×9-inch glass or metal baking dish, and place on the bottom rack. This creates steam in the oven which helps create that soft, custard texture we love about these egg bites!
Cook your bacon until crispy and drain. Then, add all remaining ingredients (except the bacon) to a blender and blend until smooth.
Pour the egg mixture into a generously-greased muffin pan. I love using a silicone muffin pan for this because the egg bites just pop right out when they're done. Fill each cup about 3/4 full.
Then, evenly divide bacon among the 12 muffin cups. Using a spoon or your fingers, press the bacon down into the egg mixture so it does not float on top.
Bake on the middle rack for about 25 minutes until eggs are set all the way through and start to pull away from the edges.
Let stand 5 minutes before using a spoon to scoop them out onto a plate.
Copycat Egg Bites
Ingredients
- 4 slices bacon, diced
- 6 large eggs
- 1 ¼ cups (4% milkfat) cottage cheese
- 1 ¼ cups shredded Gruyere cheese (or a blend of Gruyere and cheddar or Monterey Jack)
- 2 tbsp cornstarch
- ¼ tsp salt
- ⅛ tsp freshly ground pepper
- ½ tsp hot sauce, such as Tabasco
Instructions
- Bring a pot of water to boil. Preheat oven to 300℉, with racks in middle and lowest positions.
- Place a 13x9-inch metal or ceramic baking dish (not silicone) onto lower rack, and carefully fill halfway with boiling water. This creates steam, which helps with custard texture.
- Cook bacon until crisp; drain on paper towels.
- Spray a nonstick muffin pan generously with cooking spray.
- Blend eggs, cheeses, cornstarch, salt, pepper, and hot sauce in blender until smooth.
- Pour egg mixture into muffin pan, filling each well ¾ full. Divide and press bacon into batter to avoid it floating on top.
- Bake on the middle rack 20-25 minutes until eggs are set and start pulling away from the edges.
- Remove from oven, and let stand 5 minutes. Use a small spoon to loosen the edges, and carefully lift them out onto a plate.
- Once cool, label and freeze in an airtight container.
- Microwave frozen egg bites on a paper towel 60-90 seconds (for longer, if needed) at 50% power.

How to freeze egg bites
Once the egg bites have cooled, place them in an airtight container or gallon-sized freezer bag. Label with the freezer bag insert card and add a second, outer bag.
When you're ready to eat, grab out a couple egg bites from your freezer and microwave on a paper towel for about 90 seconds (more if needed) at 50% power. Using only half power on your microwave helps to keep the soft texture of the eggs without overcooking.
