For a very easy/quick meal we like to broil chicken drumsticks, brush the exposed side with 2T melted butter/olive oil, sprinkle with s+p, place pan 8 inches from the broiler for 12 minutes, turn chicken, brush with 1T olive oil, broil for another 10 minutes. About 2 minutes before chicken is done we brush both sides of the chicken with 1 cup of BBQ sauce – that’s it! Eat with salad or whatever sides you like!

I love making meatball subs, it’s enough variation from spaghetti and meatballs (which my kids would want to eat every day) to make me happy but not to different for my kids to reject it. I heat up meatballs in marinara sauce. Toast rolls whole in the toaster, slice into them after they’ve been toasted a bit so the inside is still very soft. Place mozzarella slices on the roll, add the sauce and meatballs and sprinkle with parm. So yummy and easy on the wallet.

The favorite meal at our house is oven baked fried chicken from Southern Living. Melt butter and dredge your chicken in that. In a ziploc bag, crush corn flakes, add 2 T of garlic powder and 1/2 cup of shredded parm. cheese. Take the chicken and shake it in the flakes. Put it all in a pan. Use the extra flake mixture to cover the top again to make it crunchier and pour the last of your butter over the top to make it extra yummy. Bake at 375 for 45 minutes.

Veggie rice- great way to use up leftover veggies/rice
Just boil rice with 1/4 cup less waer than package instructions so that it comes out a little grainy.In a separate pot saute in a little olive oil:
minced garlic
finely diced onions
thyme
Season with salt and pepper to taste. Also any of your fave powdered seasonings.
Add veggies- as many as you like. I like steamed broccoli, red and green bell peppers, corn kernels- whatever you like. I sometmes add raisins too.
Add rice to veggies and combine- over low heat.
Serve with chicken or your fave protein

Tacos are a favorite and quick meal in our house. Simple and easy fixes. Purchase hard/soft taco shells, ground beef/turkey/ taco seasoning, and compliment with tomatoes, shredded cheeses, and lettuce!

On favorite meal at this time of year is a very simple tomato and grilled tofu sandwich. It’s easy … just lightly toast the bread. Grill some tofu … or fry it in a little oil and season it with soy sauce. Then assemble sandwich. We put the grilled tofu, sliced tomatoes, thinly sliced red onions, lettuce and fresh basil. It is wonderful!

Hi! It was empty the fridge pasta night last night. Boil up some noodles (I used rotini), I fried up some canned mushrooms, leftover zucchini & summer squash, added 1/2 an onion, some leftover sausages sliced up and added 1/2 jar of pasta sauce that was leftover from pizza earlier this week. Toss with the drained noodles, then added some parmesan cheese! Yummy! Thanks!

1 lb Ground Beef
1 pkg Southwest Style Simply Potatoes
1 pkg Shredded Cheddar Cheese
1 can Cream of Mushroom soup
1 cup Sour Cream
1 can French Fried Onions
Brown the ground beef then mix everything minus the french fried onions together in an 11×13 dish. Bake for 30 minutes at 350. Remove from oven, top with french fried onions, and bake 5 minutes longer.

We do a Cheesy Chicken Rice dinner. Take Boneless Skinless Chicken Breast and put in a crock pot with Italian seasoning mix, fill with water. I usually let cook all day, but you can determine when you think it is done. Take chicken out drain out all water leave maybe a 1/2 inch of water in bottom of crock pot. Put chicken on a plate and shred with a fork. Put chicken back into crock pot and add a can of cream of chicken soup and a block of cream cheese. Stir and let cook until melted. I also make comet rice and after all is done I pour the cheesy chicken over the rice. It is so good and easy and everyone I know that has tried it loves it.

Our favorite is zesty slow cooker chicken
6 frozen skinless boneless chicken breast
1 12 0z bottle barbeque sauce
1/2 cup italian salad dressing
1/4 cup brown sugar
2 tablespoons worcestershire sauce
Place chicken in slow cooker. In a bowl, mix the barbeque sauce, salad dressing, brown sugar and worcestershire sauce.
Cook and cover 3 to 4 hours on high or 6 to 8 hours on low.
We serve with baked potatoes and corn.

One of my cheapest, easiest dinners is pasta with tomatoes and cheese. I bowl a pound of macaroni. Drain. Add 3 T butter, 2 cups of cheddar or colby cheese, 1T parmeasean, salt and pepper. Then I add a can of diced tomatoes. Stir it up and eat.

I make a pizza casserole that our family loves. I use cooked egg noodles, spaghetti or pizza sauce,pepperoni,mozzarella cheese mix all together and bake at 350 for approximately 1/2 hr.

crescent roll hotdogs. Use canned cresent roll dough (like pillsbury or generic) flatten them out onto baking sheet. Lay a piece of kraft type cheese on the flat cresent roll place an uncooked top and roll it like inside the cresent roll with the cheese. Bake according to cresent roll can directions (i think usually 350 for 12 min something like that) have them with a side like fries or a veggie. My kids love this. It’s quick, cheap to make, and easy.

We all love tacos, and my kids like soft tacos the best. We use a pound of ground turkey (found a bunch at the dollar store so froze a ton of it!), add in some chopped onions, green pepper, corn, and I can even sneak some chopped zucchini in as long as I don’t overdo it and the kids discover it. Add some taco seasoning and serve in corn tortillas for the kids with shredded cheddar, adults add salsa and sour cream. I’m guaranteed to have zero leftovers on taco night.

Quick and Easy 5 Ingredient Casserole:
-1 lb hamburger browned with 1 T of chili powder
-1/2 can corn (or full can if you like lots of corn like we do!)
-Package of noodles cooked (egg, elbow, any you have on hand will work)
-1 can of tomato soup
Mix all ingredients together and place in a casserole. Top with shredded cheddar cheese and bake at 350 until cheese is melted and the inside is hot (15-20 minutes)

– a variety of beans – we like Walmart’s chili beans, plus black beans, plus kidney beans, plus garbanzos. The variety seems to make it more flavorful.

– Fiesta brand msg-free Chili powder (I don’t even measure any more).

tater tot casserole – layer casserole dish with the following in order: lb. ground round, chopped onions, can of cream of mushroom, frozen tater tots, can of cream of chicken, 1/2 can of water. Bake at 400 for 1 hour and 15 min. Kids favorite!

Make you own pizza night is always a big hit at my house (and usually happens on Friday), but I like to try different themes other than your normal pizza toppings. A big favorite in my house is BBQ chicken pizza. I usually use leftover baked chicken (cubes or pulled), cheddar cheese, a few bacon bits, and our favorite bbq sauce on a toasted loaf of french bread. Another favorite is tomato, basil, and mozerella on garlic naan. There’s loads of ways to mix it up each week… mexican, veggie (with veggie cream cheese as a base), different breads for the “dough,” etc.

Here;s a Yummy recipe…especially with all that FREE Feta Cheese we just got at Publix!
* 8 tablespoons olive oil
* 2 teaspoons lemon juice
* 4 cloves crushed garlic
* 1 tablespoon dried oregano
* salt and pepper to taste
* 4 skinless, boneless chicken breasts
* 4 slices feta cheese
* 4 slices bacon, fried and drained
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl combine the oil, lemon juice, garlic, oregano, salt and pepper. Mix together. Place chicken in a 9×13 inch baking dish and pour oil mixture over chicken.
3. Stuff each chicken breast with 1 slice feta cheese and 1 slice bacon. Secure open sides with toothpicks.
4. Bake uncovered at 350 degrees F (175 degrees C) for 30 to 35 minutes

One of our favorites is chicken spagetti, or chicken parmesan. I marinade the chicken breasts (or tenders) in italian dressing. Then dip them into some italian bread crumbs and bake in the oven. Meanwhile, boil whichever type of noodles you have on hand and heat up the spagetti sauce. I always mix my sauce and spagetti and then top eat serving once on plate with a piece of chicken…it is SO easy and yummy!!!

Simple fajitas –
Chicken
Sliced bell peppers (cheap at farmers market)
Tortillas
Lime or lime juice
Seasonings (i use Mrs Dash and garlic powder and pepper)
I bake the chicken in olive oil and garlic powder at 400degrees for about 35min
While chicken is baking, sautee the peppers in olive oil, and lots of fresh squeezed lime. I like to add Mrs Dash and/or garlic also.
When chicken is baked, cut into strips with scissors. (stays juicer if you cook as a whole breast)
Serve in tortillas or on brown rice and top with sour cream!

Our family is downsizing with only one teenage son left at home and he is hardly ever here. Our favorite is taco night with Knorr’s Mexican or Taco rice and Bush’s Grillin Fiesta Beans. It is easy and cheap when you pick up all the items on BOGO at Publix.

And here is a super easy recipe – I pretty much made this up myself to use up the BOGO Curly’s BBQ that I got free when it was BOGO at Winn Dixie and I had several BOGO coupons!!
1 tub Curly’s BBQ
1 Pilsbury Pizza Dough (I have also used frozen bread dough, but it takes time to thaw)
1 Pkg (2 cups) shredded cheese (we like cheddar or a mix of monterey jack and cheddar)
Spread the pizza dough into a large rectangle on a sprayed baking sheet. Cover evenly with Curly’s and cheese – I usually use almost a whole pkg of cheese, but not the whole thing. Now there are two options:
1) Pop it in the oven flat for about 15-20 mins
2) Roll it up and bake for 35-40 mins.
Set the oven on 350, and either eat pizza style, or slice the roll into pieces. My husband likes extra BBQ or Ranch dressing to dip. Good to serve with baby carrots and celery sticks. Or corn on the cob. Super quick, yummy, and a pretty cheap deal considering everything is routinely on sale!

My kids love Stove Top stuffing meatloaf. I love it because it’s easy and I can’t mess it up. Basically, it’s just ground beef, stove top, ketchup, 2 eggs and water, baked for an hour at 350 degrees. The amount of water you have to add depends on how lean the meat is. I’ll make some homemade mashed potatoes and steam up some corn in the microwave as side dishes. Sometimes I make the meatloaf the night before so the kids can heat it up quickly. This comes in handy on Wednesday when they are heading out to their different churches with their friends at different times and I’m juggling multiple things.

one of our favorites is also quick and easy…it doesn’t have a name because it is just something I threw together…..saute in olive oil some bell peppers and onion, I slice them and do what ever color I have on hand or multi colored… I like doing colored and green. to that add can black beans ( you can adapt for how many you need to feed) can tomatoes, I like the fire roasted ones, and then I use either some shrimp or Johnsonville Andouille sausage (cut or slice sausage) or both, get it heated well and serve over brown rice. This is a somewhat healthy meal and most of the time I have the ingredients on hand because I have already bought it all with my coupons because I know we are going to have it sometime when I don’t really feel like cooking. And for my really lazy days I keep the Uncle Ben microwave packs of Brown Rice on hand….bought on sale with coupons of course!
The sausage has a little bit of a bite to it and the shrimp and sausage together is kinda like a special treat for us. But it is an easy meal.

One of the easy dinners I use is Mini Meatloafs…all you do is mix 1 lb ground beef, box of stove top and 1 cup water together, put in muffin tin and bake 350 for 30 min. They are so easy and go great with instant potatoes and greenbeans. Little effort for a sit down dinner.

Something that is so easy for us to do quesadillas. You can do any combination of chicken, mexican rice, cheese, black beans or pinto beans, etc. I buy the Mission tortillas and always have them in my freezer. I find that they are the best brand to freeze. They don’t fall apart or crumble at all.
I also make something called “breakfast quesadillas” with scrambled eggs, potatoes, turkey sausage or turkey bacon and cheese.
You can also make the same things but make them into burritos instead and freeze them. They freeze great!!! Just wrap them in tortillas and put them all in ziploc bags and they freeze great. It’s great when you need to grab something out of the freezer really quick.
