Hurry Up and Eat – Greek Pasta Salad
Remember that Suddenly Salad Giveaway (like I’d let you all forget?) Well since Suddenly Salad was sweet enough to send me a box to try out, I figured I’d come up with a little spruced up Suddenly Salad recipe.
After trying it, I have to say this is probably the easiest pasta salad I’ve ever made. If you really wanted to fluff it up, you could add some marinated grilled garlic chicken, but here’s what we made as a quick sidedish this week . . .
Greek Pasta Salad
1 box Greek Suddenly Salad Pasta Mix
Use $0.50/2 Betty Crocker Suddenly Salad Mix or $0.50/2 Betty Crocker Suddenly Salad 6/6/2010 SS Insert (exp 7/31/2010); or enter for your chance to win FREE Suddenly Salad mix and a super cute insulated tote!
4 slices bacon cooked and diced
Smithfield on sale $3.50, will use it for Sundried Tomato Wraps also
1/3 cup water
2 tablespoons olive oil
1 tomato chopped
1 cup feta cheese
Use $1/1 Athenos Feta from 5/16/2010 SS Insert (exp 6/30/2010)
1/2 small red onion
Empty pasta into medium saucepan that is 2/3 full of boiling water. Meanwhile in large bowl stir together seasoning mix, cold water and oil. Drain pasta and rinse with cold water. Add remaining ingredients – toss to coat. Serve immediately or refrigerate until ready to serve.
