What’s for a Dinner – Restaurant Style Nachos

I love, love, love nachos!  So as I was hunting down something yummy this week, I’m so glad I remembered these!  These are easy and yummy, and would be a great appetizer along with some grilled garlic chicken this week, or have nachos for dinner (that’s what we’ll be doing this week!)     Here’s what you’ll need . . .    

 2 cloves garlic, crushed   

 6 green onions, sliced, white parts and tops separated  

  3 tablespoons canola oil

 1 cup salsa
Tostitos Salsa on sale $2.50, look for tearpad for FREE salsa when you buy two Tostitos (if you have that tearpad and print two Target coupons this would be a GREAT way to stock up!)   

 1/2 (12 ounce) package tortilla chips
Tostitos Tortilla Chips Family size BOGO $4.99, $1/1 Tostitos Target Coupon   

 1 shredded, cooked, whole chicken breast  Perdue chicken breast
On sale at Publix $3.49/lb., chicken breast on sale at Kroger $1.99/lb.
   

 salt and pepper to taste  

 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
Hopefully you have a little in your stockpile, if not use Publix brand or Cabot cheddar cheese on sale $2, look for $1/2 tearpad   

 1/2 large tomato, diced
On sale $.79/lb.  

Preheat oven to 350 degrees F (175 degrees C).  In skillet cook garlic, and white parts of green onion in canola oil until tender.  Mix in chicken, salt and pepper and saute until everything is coated with oil; then add salsa.   

 Arrange chips in the bottom of a large baking sheet.  Spoon chicken over tortilla chips.  Top with cheese and tomato.  Bake for10 minutes or until cheese has melted.   Top with green onion tops and serve!
