I’m super excited to share our very first Real Food Grocery Trip of the week $20 gift card winner!  I had two great entries (which means, you’d have a great chance of winning if you send your pictures in too!), and decided to pick randomly between the two. (They both did great, and I loved what they were able to get!)

My tip for saving money when buying real food/organic is something I just thought of last night as I was looking for new recipes for veggies I had purchased on sale.  I stumbled across a recipe for asparagus quiche, and it occurred to me that I could save big if I made my vegetables into entrees instead of just steamed and served on the side as usual.  My husband is a meat-eater and says meat must be served, but by making the veggies the star of the meal, I can buy less meat and get by with cheaper cuts if it isn’t the focus.  I am a vegetarian, so this would also make it easier for me to just leave the meat off of my serving.  I searched online for main dishes that showcased the veggies I had bought at Earth Fare and ended up with 5 dinners using the $28.75 in groceries I had just bought at Earth Fare and stuff I already had on hand.  That inspired me for today’s Kroger trip and the attached picture.  My “list” was Amy’s soups, Kettle Chips, and organic produce.  I base my produce purchases on what looks good and what is priced to my liking rather than just getting what’s on a list no matter what it costs.  I let the prices guide me.

Bought 1 Kettle chips, Sea Salt flavored- $3.00
Bought 4 cans Amy’s soups- $2.00
Bought 3 organic Roma tomatoes- $1.18 ($1.79/lb)
Bought about 1/2 pound Organic Collard Greens- $0.75 ($1.79/lb)
Bought 1 Organic Celery- $1.79
Bought 1 pack of 3 Romaine Hearts- $3.99
  • Spent $18.71 plus tax (no coupons used)
I loved that Shannon also shared her ideas for recipes for her menu plan this week using the items above:
  • Amy’s split-pea soup, Kettle chips, open-faced ham and cheese melts using ingredients I have on hand (no ham for me- I am a vegetarian)  My daughter likes to dip the chips in the soup!
  • Couscous-stuffed tomatoes, tuna patties with dill sauce served on Romaine leaves (I have couscous, tuna, and the ingredients for the dill sauce already)
  • Homemade cream of celery soup and baked potatoes (I already have the potatoes.)
  • Stuffed collards served over rice (I have ground beef and rice already.)
  • Chicken salad Romaine boats (pimiento cheese for me) and Amy’s lentil soup served over rice leftover from previous meal
That makes 5 meals from under $20 in groceries and stuff I already had.  Not too shabby!  🙂

    I didn’t see the $.75/3 Larabar printable, but I was able to download the digital version to my card and use it last night. There are several Simple Truth digital coupons as well (that’s Kroger’s ‘healthy’ line).
