Sweet and Spicy Salmon

Ingredients

  • 2 lb salmon filet
  • ¼ cup honey
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp teriyaki sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp squeeze ginger
  • 3 cloves garlic, minced
  • ¼ tsp red pepper flakes, optional
  • green onions for serving, optional

Instructions

  • Add all ingredients for marinade in a quart size zip-top bag. Squeeze to combine. Place salmon in a separate gallon size zip-top bag. Label and freeze together.
  • When ready to cook, thaw in refrigerator overnight.
  • Combine salmon and marinade and refrigerate 30 minutes.
  • Preheat oven to 375℉. Line a baking sheet with a long piece of foil. Remove salmon from marinade and place on foil. Pour marinade over salmon and fold up all 4 corners of the foil. Seal foil, leaving a small opening on the top.
  • Bake 15-20 minutes or until fish flakes easily with a fork. Open packet and broil 1-2 minutes to caramelize the top of the fish.
  • Garnish with sliced green onions if desired.

Note: Cooking time will vary depending on the thickness of the salmon. This is also excellent on the grill!
