Sprinkle pork chops with poultry seasoning and desired amount of salt and pepper.
In a large skillet, heat oil on medium-high heat. Add pork chops and brown on both sides, about 5 minutes on each side. Remove pork chops from skillet and set aside. Drain excess grease from the pan.
Melt butter in skillet. Add onions to skillet and cook on medium heat until onion is caramelized, about 15 minutes.
Add garlic and cook another 2 minutes. Stir in flour and cook 2 minutes longer. Pour in chicken broth and stir, scraping up any browned bits and also adding in any juices that have drained from the pork chops.
Add buttermilk mixing until smooth, then add water.
Bring sauce to a simmer. Turn heat down and cook for an additional 15-20 minutes until sauce is thickened.
Place pork chops in sauce, spooning sauce over meat to cover. Reduce heat to low and simmer until chops are cooked through, about 10 minutes. Season with salt and pepper and serve over rice or mashed potatoes, if desired.
