Slow Cooker Turkey Chili

Ingredients

  • 2 lbs lean ground turkey
  • 1 Tbsp olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced and any color
  • 2 stalks celery, diced
  • 1 medium sweet potato, peeled and cubed
  • 14.5 oz can crushed tomatoes
  • 15 oz can tomato sauce
  • 3 Tbsps chili powder
  • 1 Tbsp ground cumin
  • ¼-½ tsp cayenne pepper
  • 1 cup water
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  • In a large skillet, heat oil over medium heat. Add onion, garlic, bell peppers, celery and sweet potato. Sauté 5-7 minutes or until soft.
  • Add turkey, and cook until browned and crumbly, 5-7 minutes, stirring often to break up chunks.
  • Transfer mixture to a slow cooker. Add remaining ingredients, plus 1 cup water, 1 teaspoon salt and ½ tsp pepper.
  • Cover, and cook on low 6-8 hours or on high 4-5 hours.
