Sesame Pasta Salad with Grilled Chicken

Ingredients

  • 2 lb grilled chicken breasts
  • 16 oz linguine pasta
  • ½ lb broccoli florets
  • 1 pint grape tomatoes, cut in half
  • 1 bunch green onions, sliced
  • 5 medium carrots, peeled and sliced diagonally
  • ½ cup low-sodium soy sauce
  • 4 tbsp dark sesame oil
  • 4 tbsp toasted sesame seeds
  • 2 tbsp lemon juice
  • 4 tbsp brown sugar
  • 2 cloves garlic, minced

Instructions

  • Cut grilled chicken into small pieces. Prepare pasta according to package directions; rinse with cold water and drain.
  • Toss pasta with chicken, broccoli, tomatoes, onions, and carrots.
  • In small jar, combine soy sauce, oil, sesame seeds, lemon juice, brown sugar, and garlic. Shake until well blended
  • Pour over pasta; toss to combine.
