Preheat oven to 350°F. In a large skillet, brown chicken in 2 tablespoons butter, about 5 minutes on each side. When chicken juices run clear, remove and cut chicken into bit size pieces.
Place chicken into a 13x9-inch baking dish. Mix sour cream and soup together; pour over chicken.
Mix cracker crumbs, poppy seeds and melted butter. Evenly spread crumb mixture on top of chicken.
Bake 20 - 25 minutes or until bubbly.
