Poppy Seed Chicken Casserole

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsps butter
  • 1 cup sour cream
  • 10.5 oz can cream of chicken soup
  • 1 cup ritz cracker crumbs
  • 2 tbsps poppy seeds
  • 1 stick butter melted

Instructions

  • Preheat oven to 350°F. In a large skillet, brown chicken in 2 tablespoons butter, about 5 minutes on each side. When chicken juices run clear, remove and cut chicken into bit size pieces.
  • Place chicken into a 13x9-inch baking dish. Mix sour cream and soup together; pour over chicken.
  • Mix cracker crumbs, poppy seeds and melted butter. Evenly spread crumb mixture on top of chicken.
  • Bake 20 - 25 minutes or until bubbly.
