Kung-Pao Chicken Noodle Skillet

Ingredients

  • 2 tbsps olive oil
  • 1 1/2 lb boneless skinless chicken thighs
  • 12 oz frozen pepper and onion blend about 3 cups
  • 1 1/2 tsps crushed red pepper flakes
  • 1 1/2 bunches baby bok choy or 1 bunch regular bok choy
  • 10 oz brown rice noodles
  • 1 cup stir-fry sauce

Instructions

  • In large skillet over medium heat, add oil, chicken, pepper and onion blend, and crushed red pepper flakes. Cook 5 - 6 minutes per side until chicken is fully cooked. Add bok choy and cook until wilted.
  • Prepare noodles according to package directions.
  • Transfer noodles into skillet, add sauce, and combine before serving.
